Osetra Caviar is one of the most authentic and sought-after caviar varieties in the world, harvested from the Osetra sturgeon (Acipenser gueldenstaedtii). Native to the Caspian Sea, Black Sea, and surrounding rivers, this species is prized for the high quality of its eggs and its distinctive flavor, ranking it as the second most valuable caviar after Beluga. Osetra sturgeon typically require 12 to 15 years to reach maturity, making their caviar rare and highly prized.
Osetra caviar grains are medium to large, with colors ranging from light golden to dark brown or gray. One of its most remarkable features is its variety of flavors—a buttery, nutty taste with subtle marine notes that can slightly vary depending on the fish’s age and habitat.
