Beluga Caviar

Beluga Caviar is the rarest and most valuable type of caviar in the world, harvested from the Beluga sturgeon (Huso huso), also known as the elephant fish. This colossal species, native to the Caspian Sea, Black Sea, and surrounding waters, can grow over three meters in length and weigh several hundred kilograms. Beluga sturgeon mature slowly, typically reaching the age for caviar production at 18 to 20 years, which is why its caviar is exceptionally precious and expensive. In Iran, particularly along the southern Caspian coast, Beluga caviar is regarded as both a natural and economic heritage.
The pearls of Beluga caviar are larger than any other variety, sometimes reaching up to 4 millimeters in diameter. Their color ranges from silver to light gray, with a soft, delicate texture and a natural luster that immediately signals superior quality. The flavor of Beluga caviar is uniquely refined—buttery, complex, and subtly briny, slowly unfolding on the palate. For this reason, it is typically enjoyed pure, without any additives, to preserve its authentic taste.
From a nutritional perspective, Beluga caviar is rich in high-quality protein, beneficial omega-3 fatty acids, vitamins B12, D, and A, and essential minerals such as selenium, phosphorus, and iron. These nutrients support heart health, brain function, and youthful skin. Due to the rarity and long maturation process of Beluga sturgeon, this caviar is produced in very limited quantities and is celebrated as a symbol of luxury and authenticity on fine dining tables worldwide.
